Sebastien Silvestri

CEOTHE DINEX GROUP, Chef Daniel Boulud

Sebastien Silvestri is the CEO of Chef Daniel Boulud’s hospitality group, The Dinex Group, an international leader in the restaurant, food and beverage industry. His focus is on defining the next era for Dinex’s collection of restaurants and brands, expanding the brand portfolio through strategic partnership and new business development, and maintaining the excellence of the existing operations. He oversees the Group’s company-owned and licensed venues and operations around the world. He joined Dinex as CEO in August 2019, with over 25 years’ experience in the hospitality industry.
As CEO of Dinex, Sebastien has considerably grown the company’s portfolio, which now includes 33 operations across the United States and worldwide. Headquartered in New York, where Daniel Boulud founded the company with his flagship Restaurant Daniel in 1993, Dinex restaurant brands now include: Daniel, Café Boulud, La Tête d’Or by Daniel, Maison Barnes, Le Pavillon, Le Gratin, Jōji, Blue Box Café by Daniel Boulud, Centurion NY, Maison Boulud, Boulud Sud, Brasserie Boulud, Terrace Boulud and Epicerie Boulud. The company also operates two event spaces, Le Jardin sur Madison and SUMMIT Events, and the catering business Cuisine Boulud New York. Dinex currently has operations in New York, London, Hong Kong, Palm Beach, Miami, Montreal, Toronto, Dubai, Saudi Arabia, Singapore, and the Bahamas, and continues to expand in select global markets. The Group has consistently earned the highest industry accolades, including Michelin Stars at Restaurant Daniel, Café Boulud, Le Pavillon, and Jōji.
As the first CEO of Dinex, Sebastien focused its strategy on growing the portfolio of licensed/managed restaurants worldwide through an asset-light model. With this strategy based primarily on increased growth and reduced risk through licensing and management, the Company has been able to grow rapidly. At a time when the restaurant industry in general has experienced a dramatic reduction in profitability due to rising labor, food and occupancy costs (further compounded by the pandemic), Sebastien has steered Dinex into a period of growth and stability, while enhancing its position in the market. Sebastien also spearheaded Dinex’s entry into the large-scale luxury catering market through a joint venture with Aramark which launched in 2024, further broadening its revenue base and multiplying its potential for future growth.
